Healthy Banana Chocolate Chip Cookies

Happy Sunday, everyone! I have some good news and bad news. Studies show that it's better to hear good news first because once we hear bad news, we are less likely to even enjoy the good news! However, if we hear good news first, the bad news seems less bad. Fun fact of the day :) Good news : I have more on kitchen essentials, and some Healthy Banana Chocolate Chip Cookies today. Happy Friday, everyone! I can finally say that I feel almost completely better. Apparently, the flu from this season has mutated and we are seeing a wave of a slightly different strand. So, allow me to be an elementary school poster for a second when I say wash your hands, cover your cough, and get plenty of vitamin C! It's Wednesday, my dudes! Hope you've had a great week so far. Remember on Monday when I said I had late spring allergies? HA. Turns out it was the flu. So, my apologies for not posting yesterday! For one, I have not been up to cooking much lately (I'll share what awesome plant-based foods I've been surviving this flu with, though!), and for another, I have about enough energy to Manage my symptoms Watch How I Met Your Mother . . . and that's about it. Happy Monday, everyone! Hope you had a better weekend than I did! My spring allergies came late, and I now consider being able to breathe through your nose a privilege. Luckily, today's dish has so much flavor that you don't need a sense of smell to taste it! Since cutting meat and most animal products from my diet, I find that there is so much room for creativity. This is going to make me sound like a hippy, but I have never felt more in tune with spices and flavors than I have since making this change. I rarely make the same meal twice. However, today's meal . . . well, I keep coming back to this one because it is too dang good.  But first, I want to take a moment to share with you all my kitchen essentials--tools, grains, fruits, veggies, etc.--that I always have on hand to make a great meal, starting with spices. Buffalo Tofu Wrap

Happy Friday, everyone! Very few people may remember this one, but "it's Friday, Friday, gotta get down on Friday!" If you don't know what this is, go and look it up. Now. Better yet, imagine me singing this song after waking up the Friday I got my wisdom teeth out. Good times. I hope you all enjoyed the Light Southwestern Salad, and potentially the leftovers it gave you. I love leftovers, so many of my recipes should be enough for two, and a packed lunch for the next day! Today, we have a Buffalo Tofu Wrap. It is spicy, flavorful, crunchy, and just all-around amazing. If you've read any of my early posts, you know that I love buffalo. I previously thought buffalo chicken would be the thing that kept me from vegetarian/ veganism. But I have already found that buffalo seasoning with tempeh or tofu perfectly satisfies my need for fresh & buffalo flavors! But before I go on forever about buffalo, I want to take brief couple paragraph
